Aish El Saraya or Aisha As Saraya is a middle eastern dessert it’s more like a bread pudding trifle with a fragrant and sweetened cream on top. I grow up eating this dessert with family and friends, This Lebanese bread pudding is delicious and easy to make full of flavors and so light for after iftar in Ramadan. You only need a few ingredients to make this amazing dessert.
Servings For: 4 – 6 People Prep Time: 20 minutes + 1 hour in the fridge
Ingredients for Sugar Syrup:-
- Sugar 1 cup
- 1 tablespoon Rosewater
- 1 tablespoon Lemon juice
- Water 1 cup
To make the syrup:-
add the sugar and the water to a pot, bring it to boil. Then add the lemon juice and rose water. Then lower the heat to medium, let it boil for 2 minutes. Turn off the heat and set it aside.
Ingredients for Custard:-
- 1 litter Milk (4 cups)
- 1 cup Heavy cream
- Rosewater 1 tablespoon
- 6 tablespoons Cornstarch + 1 small can evaporate milk
- 1/3 cup sugar
For the crust and the topping:-
- 6 slices Bread
- 1/4 cup Pistachios, chopped

Aish El Saraya DIRECTIONS:-
Let’s make the crust place your bread slices in a Pyrex tray broil in the oven takes just a minute or until golden. keep your eyes on it. Broil for one side then flip on the other side, You can buy the ready toast for the store. Or you can toast the bread in the toaster then cut the edges.
Make your simple syrup:- add the sugar and the water to a pot, bring it to boil. Then add the lemon juice and rose water. Then lower the heat to medium, let it boil for 2 minutes. Turn off the heat then add your syrup on top of the toast. And let it soak.
In your pot add the milk sugar and heavy cream, and 1 tablespoon rose water then turn on your stove, keep stirring every minute so they don’t stick in the bottom, then add the cornstarch mixture (6 tablespoons cornstarch with 1/2 cup milk) then add them slowly to the ashta mixture. Keep stirring until the mixture thickens. Then turn off the oven.
Now, add your ashta pudding on top of the toast then add your pistachio. and let it cool down in the fridge for about 1-2 hours. Or until you ready to serve it.
You can make it ahead of time and leave it in the fridge.
