4 Tablespoons unsalted butter
2 Tablespoons olive oil
16 oz. baby Bella mushrooms thickly sliced
1 small onion finely diced
4 garlic cloves minced
1 Teaspoon dry thyme or fresh
4-6 pieces chicken tenders
2 cups spinach
1 1/2 cups chicken broth
1/2 cup whipping cream
1 1/4 teaspoons salt
1/2 teaspoons black pepper

Place a large heavy-bottomed pan over medium heat and melt in 2 tablespoons butter and 1 tablespoons oil.
Add sliced mushrooms and cook for 6 minutes or until softened and most of the liquid has evaporated. Add diced onion and cook 3 min, stirring often.
Add minced garlic, 1 Teaspoon thyme, 1/4 teaspoons salt and 1/8 teaspoons black pepper. Cook, stirring constantly, 2 minutes or until garlic is fragrant. Transfer mushrooms to a large plate. Wipe pan clean with a wet paper towel.
Season the tenders all over with 1 teaspoon salt and 1/4 teaspoons black pepper.
Place the same pan over medium heat and add 2 tablespoons butter and 1 Tablespoons oil. When the butter is hot and finished foaming, add seasoned chicken tenders let it cook about 3 minutes on each side or until golden brown.
When the chicken fully cooked add the 1 1/2 cup of chicken broth and 1/2 cup whipping cream then add your spinach, let it cook for about 10-15 minutes.
