Mediterranean Chickpeas is a healthy salad, Chick peas Salad with cucumbers and tomatoes and a lot of other yummy vegetables is great for breakfast, lunch or as a side dish with other food. With summer fresh cucumbers and tomatoes that I pick from my garden This salad amazing, It’s a great side dish to bring to a BBQ, picnic or backyard gathering, You can simply double or triple the recipe.

There’s a great question I get all the time CAN I EAT CHICKPEAS FROM THE CAN? Canned chickpeas are already cooked and ready to serve. That’s way I always keep them in hand when you need to add a quick protein to salads.

Servings For : 2 – 4 People Prep Time : 10 Minutes

INGREDIENTS :-

1 or 2 cans chick peas

1 small red or white onion

1-2 sticks of raw asparagus

1 large tomato

1 large cucumber

2 tablespoons fresh lemon juice

1 tablespoon extra virgin olive oil

mini size mozzarella or 1/2 cup Feta cheese

salt 1/2 teaspoons

pepper 1/2 teaspoons

1/2 teaspoons oregano

Directions:-

Step 1:-

Empty the chick peas can from the water then add the chick peas to a mixing bowl.

Step 2:-

Chopped all your vegetables and add them to the bowl.

Step 3:-

Add the cheese and season with salt black pepper and the oregano.

Step 4:-

Add the lemon juice and the olive oil to the mixture and it’s ready to serve. ENJOY.
