Fatayer meat pie is my favorite treats to eat. It’s so delicious and so tasty.
Lebanese fatayer meat pies or sfeeha are savory pastries that are traditionally served like pizzas or as little triangles of doughy bread stuffed with a flavorful ground lamb or beef filling. This time I made it with different shapes.
Making the dough from scratch! not difficult to do, and can be can be done well in advance, you also can freeze it and bake it when you want it.
It’s all starts with a wonderfully flavorful beef filling, some ground beef with onion and a lot of spices.

How to make the dough it’s the same dough that I always use for all my recipe, pizza meat, cheese and spinach pies.
Servings For : 6 – 8 People Prep Time : 1 Hour
4 cups of all-purpose flour
1/2 cup of olive oil
salt 1 tablespoons
sugar 1 tablespoons
1 1/3 cups of water
2 tablespoons yeast (1 standard packet)
Step 1:- Let’s make the dough and let it rises.
1:- mix the yeast, warm water, and sugar in a cup and let it sit for 10 minutes until the yeast mixture rises and doubles in size. This step is important to make sure the yeast is active.
2:- In the mixing bowl, add all the dry ingredients. Start by adding in the yeast and mix, then add in the warm water and oil. Continue kneading the dough for 1-2 minutes until the dough collects well.
3:- Remove the bowl out from the mixer and collect with your hand to make a round dough. Return to the bowl, cover with a towel or plastic wrap for 45-1 hour until the dough doubles in size.
Meanwhile, let’s make the meat filling;- 1 LB. ground beef 1 large onion, chopped 2 teaspoons kosher salt 2 tablespoons black pepper 1 teaspoon ground cinnamon 1 teaspoon allspice 1 teaspoon cardamom powder 1 tablespoon sumac powder 3 tablespoons olive oil.
For the Meat filling:-
Heat the olive oil in a large skillet on medium heat. Sauté the onions for 3 minutes. They should just start to turn translucent. Add the ground beef. Brown the meat for 10-12 minutes.
Add the salt, black pepper, cinnamon, allspice, cardamom powder, and sumac. Give it a stir.
Turn the stove off and let the filling cool for 15 – 20 minutes.
Now time for ASSEMBLE:-
Cut the dough for a medium ball, Cover the dough let it rest for 5 minutes.
Place some oil on a clean flat surface, roll the dough ball around so that it takes in the oil.
Roll out dough into a big circle, then cut the circle to 2 equals parts.
Place 2 tablespoons of the meat on the edge of the half-circle, and start to roll the half circle to close it.
When the half-circle closed, you want to roll the dough from inside to outside to make a snail shell. Repeat tell all the dough is done.
When you are done making your fatayer, in a small bowl beat 1 egg with a splash of water then brush the top of the dough with the egg wash mixture then sprinkle some sesame seeds and black seeds.
(baking)add some corn oil to a baking pan Then place your fatayer into the pan bake it in preheated oven on 350 for 20 minutes or until golden brown.
