Simple grilled Chicken Caprese is a recipe I look forward to as soon as my garden is ready and have a lot of tomatoes, CAPRESE salad is my favourite all the time. Fresh tomato and basil from the garden nothing can beat that. caprese salad is seasoned with salt and pepper and dressed with good quality olive oil. Balsamic vinegar or pesto.
Quick, easy, seasonal dinners don’t get much better than grilled Chicken Caprese. We’re talking about charred juicy chicken topped with briny fresh mozzarella, sweet tomatoes, and peppery basil, finished with a drizzle of sweet aged balsamic.
WHAT DOES CAPRESE MEAN? Caprese refers to a classic Italian salad made with fresh mozzarella cheese, sliced tomatoes, and basil. The top secret it the balsamic vinegar.
Servings For : 2 – 4 People Prep Time : 30 Minutes
2 small chicken breast
salt 1/2 tablespoons
1/2 tablespoons black pepper
1/2 teaspoons garlic powder
paprika 1/2 teaspoons
3 tablespoons olive oil
3 tablespoons balsamic vinegar
1/2 lemon juice
Fresh slices mozzarella
fresh basil or basil paste
2 garlic cloves, minced

In a large skillet over medium-high heat, heat oil. Season chicken with salt and pepper, paprika and cook until golden and cooked through, 6 minutes per side. Transfer to a plate.
Add garlic and cook until fragrant, 1 minute, Add tomatoes and season with salt. Let simmer until soft, 5 to 7 minutes. Then add the balsamic vinegar and the basil and lemon juice.
Return chicken to skillet and nestle in tomatoes. Top with mozzarella and cover with a lid to melt .
Spoon tomatoes mixture over chicken and serve. You can serve it on top of pasta or mashed potatoes.
If you want to grill your chicken on the outdoor grill, season the chicken with oil, salt, pepper and paprika then place the chicken on the grill cook it for 5 minutes on each side then place slices of mozzarella cheese on the top .
Then in your skillet cook the sauce add oil garlic tomato let it cook for 5 minutes then add your balsamic vinegar and basil and lemon juice then return the cooked chicken to the sauce. Serves with some spaghetti or pesto sauce
