Servings For : 4-6 People Prep Time: 15 Minutes
- 1 chicken breast
- 4-5 celery sticks
- 1/2 onion white or red
- 4-5 small size pickles
- 2 tablespoons mayonnaise
- 1 tablespoon sour cream
- 1 tablespoons salt
- black pepper 1 tablespoon
- 1/2 lemon juice
Just a few ingredients can be transformed into a cold, creamy salad or filling for a homemade chicken salad sandwich or wrap.
You can use any leftovers from dinner or leftover rotisserie chicken or grilled chicken, to make this salad.
Pour boiling water into a pot then add your chicken breast, add salt black pepper, bay leaves and let it cook for about 10-12 minutes or until the chicken breast fully cooked.
Meanwhile chop your onion, celery, and pickles, add the mayonnaise, sour cream. And give it a good mix.
Transfer your chicken breast to a cutting board, let it cool down for 5 minutes, cooled, and shred or chop the chicken into bite-sized pieces.
Add the chicken cube to the mixture and give it a mix, add the lemon juice maybe some more salt and black pepper to taste. 1 chicken breast made 4 plates as the plate in the picture. You can serve it on top of a slice of baguette bread, or you can eat it with a fork.
