How to make Kanafeh?
The shredded phyllo dough comes in long strands and it’s always frozen. You want to thaw it to bring it to room temperature and then break it up into smaller pieces in a food processor, then add the melted butter to the shredded dough and use your hands to mix them well together. Place the kanafa mixture in a baking sheet then add the mozzarella, then add some more just to cover the cheese, bake it then flip it and add the syrup.

For the kanafa:-
½ 16 ounce box shredded phyllo dough (kataifi), thawed.
mozzarella cheese about 10 slices .
1 stick butter melted 2 tablespoons pistachio.
Or You can add 1 cup shredded fresh mozzarella cheese.
For the simple syrup:-
1 cup granulated sugar.
¾ cup water.
1-2 lemon slices.
1 tablespoon rose water.
Preheat an oven to 375°F. Grease a round 11-inch pan.
Make the simple syrup, combine the water, sugar, and lemon slices in a small saucepan over medium-high heat. Bring mixture to a boil, then reduce heat to simmer, stirring occasionally until the sugar is dissolved about 5-7 minutes.
Shredded phyllo dough with a knife into smaller pieces, then add the dough to a food processor mix good, Transfer the phyllo dough into a large mixing bowl. Pour the butter into the bowl. Use your hands to mix the butter with the dough, rubbing handfuls of the dough between your palms.
After you mix the dough with melted butter add the shredded dough mixture to a round pan, add some pistachio then Evenly spread the buttered phyllo press it into the bottom and edges. And leave about 1/2 cup on the side, Spread the cheese onto the dough, leaving the edges around the pan empty, then add the other 1/2 cup on top of the cheese.
Bake in the preheated oven until the cheese is slightly golden and the edges of the dough are brown and bubbly, 20 minutes Now when the kanafa hot add the syrup on top and sprinkle some pistachio.
You can flip the kanafa and bake the other side for 5 minutes.
