Amazing traditional Middle Eastern rice dishes. Mansaf is a traditional Jordanian meal comprising of a layer of flatbread, rice, dried yogurt sauce, lamb, and toasted nuts and parsley.

This is often served for big dinner parties in our culture. I made this dish many times and every time turned delicious.

For this Amazing delicious dish you only need 4 important ingredients rice, lamb, flatbread and liquid jameed which is readily available in Middle Eastern store. Its few steps but trust me worth the try.

Servings For : 8 – 10 People Prep Time : 2 Hour

For Meat Ingredients:-

5 lbs of Lamb Shoulder cut into medium pieces and washed. Pot of Water 5 cardamoms 3 Bay leaves 1 chopped onion.

DIRECTIONS:-

Step 1:-

Place the meat into a large pot and cover it with water. Place on the stove on medium to high heat to bring this to a boil. Once it starts boiling, you will see some scum start to arise on the top of the pot from the meat. Just spoon this off and place it in a bowl to discard.

Step 2:-

Add cardamom, and bay leaves, and onion to the pot. Bring it down to a simmer and let this cook for another 1 1/2 hour or so until the meat is tender.

Step 3;-

Once the meat is tender, place the meat in a pan and set aside. Save some of the broth of the meat. You will be using a portion of it to add to the yogurt to thin the sauce if necessary.

The yogurt ingredients:-

1 container liquid jammed 2 cups plan yogurt 2 tablespoons mansaf spice (optional) 2 cups beef broth( less or more depending on how thick or thin you like your yogurt sauce).

DIRECTIONS:-

Step 1:-

In a large pot add the liquid jammed then add 2 cups of the plain yogurt then add the 2 cups of beef broth, then add 2 tablespoons mansaf spices if you have it, Whisk all the ingredients together very well.

Step 2:-

Now place your pot with the yogurt mixture on the oven over medium heat.

Step 3:-

Let your yogurt mixture cook for 10 minutes.

Step 4:-

Now, add the lamb pieces back into the pot with the yogurt. Let it cook together for another 15-20 minutes.

Rice ingredients:-

3 cups rice

6 cups of water

2 tablespoons salt

1 tablespoons turmeric

2 tablespoons vegetables oil

DIRECTIONS:-

Step 1:-

Soak the rice with hot water and add 1 tablespoon of turmeric to the water for 10-15 minutes.

Step 2:-

Drain the rice in a big pot on high heat add 2 tablespoons of vegetables follow by the 3 cups of rice and the 6 cups of hot water, then add the salt then turn the heat to low.

Step3:-

Let the rice cook for 20 minutes or until the rice cooked. Now time for assembling, You will need a huge platter about 16 inches round. Add the bread which should be ripped into pieces. Soak the bread in a few cups of yogurt sauce from the pot. Then add the rice and top that with the lamb pieces. Garnish with all the nuts and parsley. Serve the yogurt in a big bowl beside it so you can ladle more on top of your plate as you wish.
