This easy and super fast recipe salad is ready in just 3 simple steps!
- Prep: Cook couscous (per the recipe below) and prep vegetables.
- Dressing: Make salad dressing and shake in a jar, set aside.
- Combine: Toss all ingredients together and serve immediately.

¾ cup couscous
1 tablespoon butter
¾ cup water
1 cup tomatoes chopped 2 green onion
1 cup cucumber chopped
pepper chopped 1 bell
⅓ cup flat leaf parsley chopped
For the dressing:-
3 tablespoons olive oil
1 tablespoon fresh lemon juice 1 teaspoon finely grated lemon zest
1/3 teaspoon honey
1/3 tablespoons balsamic vinegar
1 clove garlic minced
salt & pepper to taste

In a pot on medium heat add the 3/4 cup of water, butter, and a pinch of salt to a boil.
Add 3/4 cup couscous then stir and cover.
Remove the pot from heat and let sit 2 minutes.
Meanwhile, place the olive oil lemon juice, lemon zest, honey, garlic, and salt and pepper in a bowl and mix well to combine.
Place couscous in a large bowl and fluff with a fork. Allow cooling completely.
Add remaining salad ingredients and dressing. Toss to combine and serve.
You can add any other vegetables to the recipe.
