So what is Musakhan? Musakhan is roast chicken, heavily scented with sumac and and a few other warm spices and served with caramelized onion flatbread. Also Musakhan is traditional Arabic (Palestinian) dish. Musakhan is traditionally served during the olive harvest to celebrate the olive oil pressing season, but it is definitely served year-round for family gatherings and more.to make this sumac chicken musakhan you only need simple ingredients the chicken and onion. Let’s make it together.
Servings For: 2-4 People Prep time: 30 Minutes
1 whole chicken
3-4 large onion white or red, slices
1 1/2 cup olive oil
Salt and pepper to taste
Sumac as u needed , about 3 tablespoons
Traditionally, you would use taboon bread. But because that is not available here in the states, you can use other flatbread options like Greek pita bread or naan. You want a thicker type flatbread as it will be topped with the cooked onions and then the roast chicken for serving. If u are lucky you can found it in any Middle Eastern grocery shopping.
To cook the chicken we have 2 ways.
1.Add 6 cups of water in a pot Ana cook the chicken for about 20 minutes add salt pepper.
2.make sure chicken pieces dry and place them on a roasting pan add some salt pepper Ana good amount of sumac Drizzle generously with extra virgin olive oil, Give the chicken a good rub with your hands. Arrange the chicken pieces skin side up and place on the middle rack of your heated oven. Roast for about 1 hour or until fully cooked.
In a pan on medium heat add the olive oil then cook the slice onion, remove some of the oil then add liquid, about 2 to 4 tbsp of chicken broth to help it cook.
Place your flatbread to a baking dish Top it with the onion then add the chicken then more onion on the top.
Preheat your oven to 375 degrees F (or 190 degrees C) Place your baking dish in the oven for 10 minutes.
