Do you miss your mom’s orange cake I DO, I always remember moments in the kitchen, waiting for my mom to take the orange cake out of the oven, the smell was delicious that we eat the cake when it’s still warm.
Servings For : 6 – 8 People Prep Time : 1 Hour
1 cup orange juice
4 eggs room temperature
2 1/2 cups flour
1 1/2 cup sugar
1/2 teaspoons white vinegar
1/2 teaspoons vanilla
1/4 teaspoons salt
2 tablespoons plan yogurt
3 tablespoons baking powder
3/4 cup oil
2 tablespoons orange zest.
1 cup = 300 ml
Adjust oven rack to lower middle and preheat the oven to 350F/180C.
In a medium bowl whisk together flour and baking powder. Set aside.
In a bowl of a stand mixer add the eggs and sugar and whisk it for about 5 minutes on high speed till your eggs get a light and fluffy crumb. This is the only step that adds air into the cake.
Add vanilla vinegar then add the oil, orange zest and the yogurt, follow with orange juice Give it a good mix for about 2 minutes.
Then add your dry mixture (flour and baking powder with 1 tablespoons orange zest), add them to the mixer add mix it good for and 2 minutes and don’t over mix.
Before you pour the batter, spray your baking pan with oil or butter then pour the batter, then Bake for 50-60 minutes for the bunt pan or, 30-40 minutes for the loaves or until a toothpick inserted into the center of the cake comes out clean. If the top is browning quickly while baking, cover loosely with aluminum foil. Allow cake to cool completely on a wire rack.
Using Fresh Oranges , I highly recommend using fresh oranges for this cake, using fresh citrus really helps the flavor burst through in each bite.
A tip: I find it easier to zest the oranges before juicing them.
