An easy and creamy roasted tomato basil soup full of incredible flavors, naturally thickened with few ingredients.
Ready in less than 30 minutes, For my kids to ask for this Creamy Roasted Tomato Basil Soup it must mean something. They love it with croutons or crackers. This soup is the perfect start to a meal, or as a meal in itself, it’s perfect always on special occasions and to be fancy with your guest. To get that creamy texture, I add a heavy cream only few tablespoons You can use tomato canned for faster way pour it in a pot and simmer them for 15-20 minutes until they’re soft. But for this recipe I’m using fresh roasting tomato and roasted white onion with whole (smashed) garlic.

Servings For : 2-4 People Prep Time : 30 Minutes
3-4 Fresh soft tomato
1 large white onion
3-4 Fresh basil leaves
2 cups vegetables stock
2 tablespoons olive oil
1 tablespoons salt
1/2 tablespoons black pepper
3 tablespoons heavy cream
Preheat oven to 400F.
Cut your tomato and onion to fourth.
In a baking pan place the tomato onion and garlic. Add the olive oil on the top then Add 1/2 tablespoons salt and pepper then add the crushed garlic.
Bake for 20 minutes or until softened.
On the store in your pot add the fresh basil , roasted vegetables then with your hand blander, blind the mixture together add the rest salt and pepper to taste. Finally add 3 tablespoons heavy cream.
In a bowl pour the soup add some croutons on top and enjoy.
If you don’t have any fresh basil you can always use basil paste, it’s so fresh and delicious.
